Sorry to those folks who only read my blog for updates about the kids. I've adapted my own recipe for granola and I'm not sure where else to record it that I won't lose it. (If it makes you feel any better, the kids love the granola, too...)
4 cups oats (not instant)
1 tbsp cinnamon
2/3 cup honey
1/3 maple syrup
1/2 tbsp vanilla extract
1/4 cup unpacked brown sugar
1 cup slivered almonds
1 cup chopped pecans
1 cup unsweetened coconut flakes
Mix oats & cinnamon and spread on 2 wax paper-covered baking sheets. Bake at 300*F for 10 minutes. Meanwhile, mix honey, maple syrup, vanilla and brown sugar on stovetop over med-low heat. Add nuts, coconut and liquid mix and stir until all coated. Bake 25-30ish minutes, stirring every 6-8 minutes to make sure it doesn't burn. Rotate baking sheets front-to-back and top-to-bottom with every stir break.
Total calories - approx. 4000...servings, hopefully 12ish? Doubt I'll ever know since the kids keep filching it...think it's supposed to be about 350 for a half cup, though...
Mmmmmm.... homemade granola is the BEST! I don't know who filches more when we have a fresh jar - the littles or the bigs! :) Thanks for sharing your recipe!
